Vegetable soup.

It is getting cold, and one of the things that makes me happy as the weather cools if is a good soup. This one is very versatile in that you can put in just about anything and it will taste good. I have tried it many times and it has never let me down no matter what I stuck in it. Now here's what ya'll need:

15 cups of water
1 kg of broccoli
5 bay leaves
1 head of garlic
1 onion
1 third tbsp of red chile flake
3 big tbsp of butter or margerine
1 tbsp of chicken stalk
couple shakes of pepper
a couple shakes of sage
1.5 tbsp of consome
2 cups of milk

Start by putting the water on to boil with the leaves and the chile in it. Then chop up the onions and garlic and broccoli and stick them in to boil and boil them until the broccoli is soft about 15 min, then strain the veggies(and save the remaining water of course) and pull out your leaves, and let it all cool for a bit, then blend the veggies until they are a fine pulp and dump it back in the water pot and put it back on the cooker and set on medium heat and heat it back up. Then add your spices and butter. Once it is slightly boiling put in the milk(none of this curdled milk business please). Goes great with garlic bread or the scones on Alleys blog, I love those very easy and very yummy. And thats all she wrote, people. Have fun cooking.

Vegetable chicken curry.

It is a cold and damp day here in my town. The goodies just came in and there was a box of Broccoli and what better to then vegetable curry on a day like this?

If you subscribe to my theories then and you want to have some then here is what you need to do it

10 cups of water
6 bay leaves
2.5 tbsp of red chile flaked
2 heads of garlic
1 onion
1.5 kgs of broccoli
8 whole chiles
1 big piece of ginger
1.5 cups of peanuts
3 tbsp of salt
a few shakes of pepper
1.5 tbsp of cumin seeds
I can of coconut milk
3 tbsp of sugar
kilo and a half of chicken

And here's how you do it: You put the water on to boil on high heat, and you toss in all the leaves and chile, then you chop up all the vegetables and you put them on to boil with the peanuts cumin seeds. Let it all get soft, it should take about ten min to get it nice and ready for the blender. Get the leaves out and the whole chiles and let the pot cool for just a bit(you all know what happens when you blend it's when it's hot), and then blend it. Once it's done add the sugar and the rest of the spices and let it boil for a little longer about five min. Get the chicken and cube it. Pull out you good pan and put in a bit of oil and fry the chicken it two batches and add half a tbsp of salt to each and a few shakes of pepper. Cook it until it's 80 percent done and then add it to the curry. And cook for another five to ten min. On the pan there should a bit of browned stuff, scoop out a bit of the curry and let the browned goodies become liquid and then it as well. Then add the coconut milk last. and thats that. My home loved it and so did I. Have fun my readers. God bless you all. Have a nice day.
